Let there be soup....

Sometimes leftovers can be a complete nuisance, you are left munching through them out of a sense of duty as throwing them out would be a bad thing, other times left overs are pure culinary gold.  At the weekend we have roast leg of lamb, coated with lemon and honey and there were enough left over pieces for me to make one of my favourite soups.

Its not an original - I'm following a recipe from my favourite recipe book...


Firstly pull all the ingredients together...
2 tablespoons olive oil
2 medium onions finely chopped
275g lamb finely diced
1.2 litres beef stock
275 ml Guinness
3 sticks celery diced
3 carrots diced
50g pearl barley washed
110g red lentils washed
3 medium potatoes ( about 450g) peeled & diced
pinch of dried herbs / some fresh basil

Doesn't it all look scrummy?


Now for the doubters amongst you I shall illustrate how simple soup is to make by giving you directions by the medium of photography... minimal words allowed!
